Food Establishment Inspections conducted in Dickinson County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from May 23 through June 4, 2015.
La Fiesta, 2210 N. Buckeye – Abilene (May 28)
– Dishwash person after handling and spraying off soiled dishes, glasses and food equipment and being place in the auto wash machine, failed to wash hands before immediately handling clean equipment that came out of the auto wash machine. Corrected on site: Educated and hands rewashed.
– Waiter places cut lemons onto drink glass with bare hand contact. Corrected on site: education by owner who also saw this and gave instructions to other staff persons on site.
– One flying insect was found in one open bottle of peachtree snapps at the bar area in the amount of one half pint in volume. Corrected on site: bottle discarded.
– Gallon can opener had food residue on the cut blade. Employee says they are cleaned daily, but the upper edge of the cut blade at the area where the screw hold blad to handle has dried residue that required a pressure sracting to remove. Corrected on site: recleaned.
– One of the food equipment metal containers still had the day dot type sticker on the bottom of the pan that is stored away as clean.
– Two knifes were stored away as clean on a wall magnet holder and they had a small amount of dried-on food residue.
– Dishes were observed being run through the auto wash machine and a test was done to measure sanitizer strength and found to be recording no detect for chlorine. A professional service rep for the machine just happend to arrive moments later, assigned to service the machine for another issue related to the machine. While there he trouble-shooted and found the need for a replacing of a faulty supply line hose. Corrected on site: as noted and testing at 100 parts per million.
– Kitchen make table line with one reach in cooler having raw chicken, pooled eggs, chorizo, beef, shrimp, and fish not cold enough. Owner advised the help left them out on the table before transfering to this reach in cooler. Normally came from the walk in cooler. Temperatures recorded on foods from overnight verify that the unit is operating properly. Corrected on site: educated.
– Front buffet line is a cold holding unit that is has the metal containers in the opening slots resting on ice that is filled underneath. The ice does not come up to the top level of the temperature sensitive foods and does not maintain cool enough temperature. Advised by owner that the buffet salad bar is set up only from 11:00 am to 2:00 pm and he discarded the sensitive products. Corrected on site: discarded remaining portions within the next 15 minutes.
– One garden sprayer with no label of the contents inside unit. According to owner, it is degreaser for the grill area. Corrected on site: container marked.
– No ambeint air temperature devices in three reach in coolers within the building. Corrected on site: during time that inspector was present, owner when to retail store and brought them back.
– Four open 5 gallon pails that contain dry spices have lids off and are setting under wire storage racks that have soild and loose rusting metal that have the potential to drop into the containers. Corrected on site: owner placed the lids for the containers and closed the contents.
– At the fountain machine ice bin, the ice scoop was left in the bin with the handle in contact with the ice by one of the employees, while others were returning it in a proper manner. Corrected on site: educated.
– One knife used to cut vegetables was stored on the top of a soiled mixer blender motor at the side of one of the make tables in the food preparation room. Corrected on site: cleaned and moved by owner to other location.
– Pans that had just come from the auto wash machine were being stacked wet and place on the metal storage rack in the ware wash room. Corrected on site: educated.
– Top flat side top ledge of the ice maker has some dust on the surface.
– Men’s public use toliet room door does not self closed when not in use.
– Small amounts of peeling paint in the walk in cooler and a section of the sheet rock paper coating is peeling away on the ceiling in the food preparation room.
– Under the counter where the wait station fountain machine is located is wet and soiled floors with mold growth, in the corners.
– Establishment was operating with an expired food license. Corrected on site: submitted a renewal application and owner placed in envelope to mail today.
Panda Kitchen, 201 W. Trapp – Herington (June 3)
– Metal steam pans stored next to make table in kitchen are wet. Advised kitchen manager to reduce the number of pans to those only needed and to air dry before stacking.
Pizza Hut, 1703 N. Buckeye – Abilene (May 27)
– Food server/waitress after cleaning off soiled dishes and utensils brought back from customer use, appropriately goes to hand sink and pre-rinsed and soaped hands but only for a duration under 10 seconds before filling glasses of beverages for customer(s). Corrected on site: educated, hands rewashed.
– Dishwash person after after handling and spraying off soiled dishes handles clean dishes from the auto wash machine with out washing hands in between. Corrected on site: educated.
– Gal can opener with food residue on the cut blade. According to manager, it could not be establishment if it had been cleaned within the last 24 hours. Corrected on site: cleaned immediately.
– The wall mounted vegetable slicer after cleaning in a disassembled state, still had food (vegetable) particles left on the surface of various parts of the unit. Corrected on site: recleaned.
– Cottage cheese, macaroni salad, potato salad, diced tomatoes, and cut lettuce at cold hold salad bar not cold enough. According to manager, items had been changed out at 2:00 p.m. Corrected on site: items discarded and replaced with new items.
– Two in-line water filters leading to the ice maker have a marked date on the units cartridge cover of 10-7-10. There is no documentation to establish the frequency of changing the
filters. Manager will see to their replacments.
– Current food establishment icense is not posted. Corrected on site: person in charge found it and posted in front area.
Subway, 313 S. E Street – Herington (June 3)
– Black plastic pans on clean pan rack have sticker residue on outside surfaces. Corrected on site: pans were moved to 3 vat sink.
– Steak, chicken teriyaki, and chicken strips on front make table not cold enough. Corrected on site: food was discarded.
– Container of powdered cleaning agent is setting on shelf next to baking mats in kitchen area. Boxes of gloves are setting on same shelf as soaps under front handsink. Corrected on site: cleaner and gloves were moved.
– Boxes of gloves, which are used for food prep, are stored under the drain pipe of the front handsink. This pipe is not shielded. Corrected on site: boxes of gloves were moved.
