Saline County Food Establishment and Lodging Inspections, November 12-18, 2015

inspectionsFood Establishment and Lodging Inspections conducted in Saline County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from November 12 through November 18, 2015.

Food safety and lodging inspections are unannounced, and inspection results represent only those conditions found in the establishment at the time of the inspection.

Burger King #10701, 2650 S. 9th St. (November 16) Regular Inspection
– Drain board on right/west side of 3 vat sink is holding water and not self draining.
– Nesting hot holding unit plastic pans directly after removing from sanitizing solution leaving water between pans.
– Hose attached to splitter after backflow device on mop sink faucet is hanging below flood rim. Corrected on site: raised hose above flood rim.

Exceptional Caterers, 219 S. 3rd St. (November 16) Regular Inspection
– Floor fan aimed at rack of cookies full of dust.

IHOP #3103, 535 W. Diamond Dr. (November 17) Regular Inspection
– West drawer cooler temperature at 47.6 degrees F. Corrected on site: discontinued use and moved potentially hazardous foods to other refrigeration units.
– Sliding doors on milk cooler do not completely seal.
– 4 inch stainless steel pan stored on clean dish rack has dried on food debris on bottom of pan. Corrected on site: moved to warewashing.
– Plastic 6 inch pans are nested together with water between pans on clean dish rack.

Logan’s Roadhouse, 3050 Riffel Dr. (November 18) Regular Inspection
– Open gallon of milk inside bar reach-in cooler dated as opened on November 9. Corrected on site: voluntary destruction.
– Slicer has dried on food debris on bottom interior side of cutting blade. Stainless steel pans stored on clean dish rack in prep area have old date mark stickers and one pan with melted plastic wrap on lip of pan. Ice scoop holders have accumulation of mold on bottom surface. Corrected on site: moved all to warewashing to be cleaned.
– Plastic pans stored on clean dish rack in prep area are nested together with water between pans.
– No hand drying provision at handwashing sink at expo area. Corrected on site: supplied towels.
– Mechanical warewashing room floor is covered in debris.
– Bottle of stainless steel cleaner setting on top of ice machine. Corrected on site: moved to chemical storage area.

Russell’s Restaurant, 649 Westport Blvd. (November 16) Complaint Inspection
– No chlorine test strips available for mechanical warewashing machine. Corrected on site: supplied with chlorine test strips.
– Cook handled ready to eat toast with bare hands. Corrected on site: disposed of toast, gloved and remade.
– Pie spatulas stored in 81.4 degree non running water at wait staff station. Corrected on site: moved to warewashing and turned running water on.
– Sausage patties at 131.2 degrees F in steam table for approximately 1 hour. Corrected on site: moved to refrigeration to quick chill.
– Taco meat inside east walk-in cooler dated November 5 through November 11. Corrected on site: disposed.
– Slicer and arm above clean mixing bowl have accumulation of dried on food debris. Corrected on site: cleaned in place.
– Stainless steel steam table pans stored on clean dish rack nested together with water between pans.
– Garbage disposal does not work per owner and backflow for disposal is missing top cap.
– Spray can of insect spray setting on top of case of wrapped cardboard trays. Corrected on site: moved insect spray to office.

Saline County Commission on Aging, 245 N. 9th St. (November 18) Complaint Inspection
– One dead roach on floor of dry store room. One dead roach on floor on south side of serving line. Corrected on site: swept up dead bugs.

Sleep Inn & Suites, 3932 S. 9th St. (November 12) Follow Up Inspection
– No Violations.

Speakeasy, 2030 S. Ohio St. (November 17) Regular Inspection
– Cooling chicken breasts inside 6 inch deep plastic pan. Corrected on site: moved to sheet pan.
– Cracked plastic lid on peppers and onions in make table, chipped black bowl on clean dish shelf above portable steam table. Corrected on site: disposed of lid and bowl.
– No thermometer available inside drawer, reach-in cooler, make table reach-in cooler or True reach-in cooler.
– Drawer cooler and beer walk-in cooler doors will not completely close.
– Can opener blade has build up of food debris. Magnetic knife rack holding knives covered in food debris. Corrected on site: moved can opener and knives to warewashing and cleaned magnetic knife rack in place.
– Interior bottom shelf of make table and true reach-in coolers covered in food debris.
– Plastic bag full of to-go black foam containers setting on floor of wait staff area.
– Hole in ceiling above the food prep area.
– HVAC vent above warewashing and food prep area full of dust.
– Bottle of orange pink liquid not labeled with common name in wait staff area. Corrected on site: labeled santizer.
– 3 cans of stainless steel cleaner setting on top of ice machine. Corrected on site: moved to mop sink.

Subway #12540-14, 1014 E. Crawford (November 17) Regular Inspection
– Two black plastic make table pans have corners chipped off and one clear plastic lid to make table pan is cracked. Corrected on site: discontinued use and disposed into trash.
– No soap in soap dispenser at handwashing sink next to back prep table. Corrected on site: supplied with soap.
– Automatic paper towel dispenser not dispensing paper towels at handwashing sink next to back prep table. Corrected on site: installed batteries and paper towel dispenser now working.

Super 8 Motel, 120 E. Diamond Dr. (November 17) Regular Inspection
– Cases of cocoa, tea and orange juice setting on floor in kitchen.
– Dishware dried on top of cloth towel.

Taco Bell, 2305 S. 9th St. (November 18) Regular Inspection
– Inside cabinet under self service tea, shelf is covered in spilled beverage residue.
– Stainless steel pans on clean dish rack, and straight out of sanitizing vat, are nested together with water between pans.

Webster Conference Center, 2601 N. Ohio St. (November 18) Complaint Inspection
– No Violations
