Food Establishment and Lodging Inspections conducted in Saline County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from February 11 through February 17, 2016.
Food safety and lodging inspections are unannounced, and inspection results represent only those conditions found in the establishment at the time of the inspection.
Blind Pig, 2501 Market Place (February 16) Regular Inspection
– Copper cups used for Muscow Mule drink per person in charge. Corrected on site: removed from use.
– Pump lid on honey mustard cracked and taped with masking tape. Corrected on site: removed lid from use
Hong Kong Buffet, 2515 Market Place (February 11) Complaint Inspection
– Trash receptacle in ladies toilet room not covered.
– Raw salmon stored above leaves and avocados inside sushi reach-in cooler. Corrected on site: moved raw salmon to bottom shelf.
– Kitchen floor not cleaned at closing.
– Unclean dishware left in warewashing area overnight.
– Bus tubs used for food have cracked corners and white sushi plate corner is broken off. Corrected on site: moved cracked bus tub to warewashing area for non-food uses and sushi plate disposed.
-Caulking hanging from inside of ventilation hood above cooking area.
– No records available for parasite destruction for salmon or tuna served raw.
– Loboy reach-in cooler temperature at 45.3 degrees F. Corrected on site: removed potentially hazardous foods and called for service.
– Woks on stove top uncleaned from night before. Corrected on site: cleaned in place.
– Kitchen trash not removed at closing, left in kitchen overnight.
– No detectable wiping cloth sanitzer at 3 vat warewashing sink area.
– Bus tub of peanut candy stored on shelf in dry storage area uncovered.
– Squid and chicken thawing completely submerged in non-running water inside food prep sink. Corrected on site: turned water on to flush food particles.
– Spray bottle of red liquid not labeled with common name under handwashing sink in grill area. Corrected on site: labeled cleaner.
– Bowl stored in bus tub of peanut candy.
– Serving spoon for rice on buffet line stored in non-running water.
– Crab temperature at 43.9 degrees F, raw chicken temperature at 45.1 degrees F, raw beef temperature at 44.4 degrees F, Loboy reach-in cooler temperature at 45.3 degrees F. Food prepped at 8:30 a.m. day of inspection per person in charge, temperature taken at approximately 9:30 a.m. Corrected on site: moved to walk-n cooler.
– Chicken bones and broth setting on stove top overnight, temperature at time of inspection at 62.7 – 62.9 degrees F. Corrected on site: voluntary destruction.
– Notice of non-compliance issued. Follow up inspection scheduled for February 21.
Huddle House, 2250 N. Ohio St. (February 17) Follow Up to Administrative Order
– At waitress area, back counter wet wiping cloth stored inside soap and water. Corrected on site: moved to sanitizer.
– Wait staff took a drink of coffee and then placed open cup on tray next to food and clean dishware. Corrected on site: disposed of coffee and educated.
– Single service portion cups setting on top of make table pushed up against wait area handwashing sink. Corrected on site: moved make table approximately 1 foot away.
– Small stainless steel pan nested on top of another pan on clean dish rack has food residue on inside of pan. Corrected on site: moved to warewashing to be recleaned.
– Two containers of whipped butter blend spread setting out at ambient temperature in prep area range in temperature from 64.9 – 67.6 degrees F since last night. Corrected on site: voluntary destruction.
– Chili stored inside west line Delfield reach-in cooler is 55.1 degrees F. Per cook, came out of walk-in cooler and was from night shift. Corrected on site: voluntary destruction.
– Raw shell eggs stored above cooked corn in west Delfield reach-in cooler. Corrected on site: moved eggs to upright Delfield reach-in cooler.
– Gray bucket used as ice bucket does not appear to be food grade quality. Corrected on site: discontinued use and using butter bucket.
– Small stainless steel pans and plastic containers stored nested together with water between pans/containers.
– Two ceiling tiles missing between walk-in cooler and office.
– Notice of non-compliance issued. Follow up inspection scheduled for April 18.
Kansas Highway Patrol Training Center, 2025 E. Iron Ave. (February 16) Complaint Inspection
– No Violations.
Petro Stopping Center, 2125 N. 9th St. (February 15) Regular Inspection
– No allergens listed on chicken or tuna salad sandwiches or pudding packaged in store.
– No business address on bagged ice.
– Two and half gallons of cold brew coffee is moldy inside brewing container. Corrected on site: voluntary destruction.
– Polish sausage inside Petro walk-in cooler dated February 14 through February 24. Corrected on site: re-dated February 14 through February 20.
– No ingredients listed on packaged in store chicken or tuna salad sandwiches, beans or pudding.
– Lights in Petro’s unpackaged self-service food area not shielded or protected.
– Hard boiled eggs temperature at 47.2 degrees F, yogurt temperature at 50.3 degrees F, roast beef sandwich at 44.9 degrees F, retail case cooler temperature between 31.2 to 41.4 degrees F. Corrected on site: voluntary destruction and rearranged food so case cooler would circulate.
– Krispie Kreme pastries do not have an ingredient list available.
– Ten stainless steel pans on clean dish rack stored nested together as clean, have dried on food residue. Corrected on site: moved to warewashing to be cleaned.
– Case of single use straws stored under drain line of self service tea dispensers at Popeyes.
– Hose hanging below flood rim of mop sink with splitter after the backflow device. Corrected on site: raised hose above flood rim.
– Lid on rice bin in Popeyes cracked and broken. Corrected on site: replaced with foil.
– Popeyes ladies toilet room door lock is broken.
– Notice of non-compliance issued. Follow up inspection not scheduled.

Pizza Hut, 550 S. Ohio St. (February 15) Regular Inspection
– Light above iced tea dispenser not shielded or protected.
– No thermometer inside True reach-in cooler. Corrected on site: placed thermometer inside True reach-in cooler.
Porky’z Taquitoz, 1021 W. Cloud St. (February 17) First Operational Inpsection After Licenstion
-Pork temperature at 118.7 degrees F and Beef temperature at 122.4 degrees F inside roaster hot water bath for approximately 30 minutes. Corrected on site: reheated pork to 188 and beef to 181, also turned up heat on water bath.
Rolling Hills Zoo, 625 N. Hedville Rd. (February 17) Regular Inspection
– Open containers of onion and pickles setting on self service bar without sneeze guard or lids. Corrected on site: covered with lids.
– Pair of tan colored plastic tongs have a melted surface. Corrected on site: removed from us
– Filters in hoods and walls of hoods are covered in grease above fryer and stove and grill.
– Clean knives stored on table under the “Blodgett” oven which has accumulation of food debris.
– Case of single service dome lids setting on floor under front line.
