Saline Co. Food Establishment & Lodging Inspections, June 30 – July 6, 2016

inspectionsFood Establishment and Lodging Inspections conducted in Saline County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from June 30 through July 6, 2016.

Food safety and lodging inspections are unannounced, and inspection results represent only those conditions found in the establishment at the time of the inspection.

Chili’s Grill & Bar, 2255 S. 9th St. (July 5) Standardization Inspection
– Raw beef stored above fully cooked beef tips on a speed rack in walk-in cooler. Corrected on site: employee moved beef tips.
– Container of Rinse Max was mounted above clean utensils on clean side of dish machine. A bucket labeled as ‘sanitizer’ stored on top of cabinet containing salt, sugar, and flavors for use at bar. Corrected on site: employee moved sanitizer bucket.
– Three molded cucumbers and three molded jalapeno peppers in walk-in cooler. Corrected on site: employee discarded.
– Winged insects present in bottle of Patron citronage. Corrected on site: employee discarded.
– Spatula was stored wedged between base of a steam table and top of small prep table by the grill/oven. Knife stored in crevice between prep sink basin and prep sink basin strainer. Corrected on site: employee moved utensils to dish room for cleaning.
– Five gallon jugs containing yellow liquid were without labeling on shelf in dry storage area. Corrected on site: employee identified contents as vegetable oil and labeled appropriately.
– Shredded cheese was being held at temperature of 69 degrees F in grill make table. Ambient air temperature of cooler was 38 degrees F. Cheese was in portion bags and double panned in upper compartment next to steam table. Corrected on site: pan was marked with prep date of June 30, employee discarded.
– Stickers and adhesive residue present on food containers stacked and stored as clean. Corrected on site: employees sorted containers for cleaning
– Dried food debris on a scoop stored as clean above prep table. Corrected on site: employee moved scoop to dish machine.
– Condensate from reach-in cooler was dripping onto cutting board of grill make table. Corrected on site: manager requested service on cooler, employee cleaned and sanitized cutting board.
– Food containers stacked wet after cleaning. Corrected on site: educated.
– Grill make table below shelf with small reach-in cooler on it. Condensate line for reach-in cooler was leaking onto shelf, then dripping to make table cutting board below. Lid to make table was open and droplets were within two inches of food. Corrected on site: manager called for service on cooler, employee closed lid and cleaned sanitized board.
– Notice of non-compliance issued. Follow up inspection scheduled for July 15.

KBI Meats, 1400 E. Iron Ave. (June 30) Licensing Inspection
– No Violations.

Legends Sports Bar & Grill, 2110 W. Crawford St. (July 6) Standardization Inspection
– Cases of raw shell eggs stored on wire shelf above assorted fresh vegetables in walk-in cooler. Corrected on site: employee moved eggs.
– Sliced cheese was being held at 47 degrees F in grill make table. Corrected on site: employee said cheese had been in make table for more than twelve hours, employee discarded.
– Accumulation of dried food debris on interior surfaces of microwave oven.
– Waste receptacle not conveniently located near wait station hand sink.
– Bucket containing blue liquid was without labeling on kitchen cart. Corrected on site: employee identified contents as sanitizer and labeled bucket.
– Cooked chicken wings date marked June 29-July 6. Corrected on site: educated, employee discarded.
– Seals on grill make table reach-in cooler doors damaged.
– Wet mops stored in the service sink basin.
– Thermometers not present in Liebherr, Haier, or grill make table reach-in coolers.
– Food debris and food sludge on floor under dish machine.
– Sanitizer tablets and chafing fuel stored on cart above sugar. Corrected on site: employee moved sugar
– Bucket containing sanitizer solution stored on shelf above ice buckets in kitchen. Corrected on site: employee moved sanitizer bucket.
– Chafing fuel stored above single use items in stock room. Corrected on site: employee moved single use items.
– Employee handled soiled utensils at prewash station with gloved hands, then proceeded to unload clean utensils from dish machine without first removing gloves and washing her hands. Corrected on site: educated, employee removed gloves, washed hands, and rewashed utensils.
– Stickers and adhesive residue on containers stacked and stored as clean. Corrected on site: employees sorted containers and began cleaning
– Dried food debris present on several knives and utensils stored as clean throughout kitchen. Dried food debris on plates stored as clean below grill prep table. Corrected on site: employees sorted items and began cleaning.
– An open drink cup containing orange beverage was stored on shelf above grill prep table. Corrected on site: employee discarded.
– Container of raw cod fillets stored on wire shelf above fully cooked chicken wings in walk-in cooler. Corrected on site: employee moved cod fillets.
– Bottle of pain relief tablets stored on shelf above kitchen prep table. Corrected on site: employee moved bottle.
– Wet wiping cloths stored on table by sanitizer bucket. Corrected on site: educated, employee placed cloths in sanitizer solution for storage.
– Establishment does not have test kit to measure chlorine sanitizer concentration.
– Container of shelled boiled eggs not date marked. Corrected on site: employee could not identify prep date, employee discarded
– Container of gravy without date marking in walk-in cooler. Corrected on site: employee could not identify prep date, employee discarded
– Box of molded polish sausages stored in walk-in cooler. Corrected on site: employee discarded.
– Open container of cottage cheese without date marking. Corrected on site: employee identified open date as July 3 and date marked appropriately.
– Cooked ribs and Italian beef soup without date marking in walk-in cooler. Corrected on site: employee said ribs and soup were prepared on July 3 and date marked appropriately.
– Coleslaw date marked June 27 -July 4), cooked corn date marked June 20 – June 25, cooked black beans date marked June 20 – June 25, ham date marked June 26, turkey date marked June 26, and prepared on site ranch dressing date marked June 26 – July 1 and held for more than seven days. Corrected on site: educated, employee discarded.
– Several dried mouse droppings in cabinet below bar hand sink.
– Notice of non-compliance issued. Follow up inspection scheduled for July 16.

Maggie Mae’s, 409 S. Broadway Blvd. (June 30) Follow Up Inspection
– No Violations.

Pizza Hut, 2935 S. 9th St. (July 6) Standardization Inspection
– Shredded lettuce held at 49 degrees F on salad bar. Corrected on site: employee said lettuce was removed from walk-in cooler two hours prior to inspection, employee returned lettuce to walk-in cooler for rapid cooling.
– Pump bottle containing yellow liquid was without labeling on storage shelves by three vat sink. Corrected on site: employee identified contents as vegetable oil and labeled appropriately.
– Mold growth in cabinet below soda fountain.
– Fully cooked meatballs were without date marking in pizza make table. Corrected on site: employee could not identify prep date, employee discarded.
– Stickers and adhesive residue were present on food containers stacked and stored as clean. Corrected on site: employee sorted and cleaned containers.

Salina Ambassador Hotel, 1616 W. Crawford St. (July 6) Complaint Inspection
– Regulatory authority not notified upon receiving complaint of mold in rooms 111, 104, 156.
– Rooms 111 and 104 not occupied at time of inspection, but still on vacant ready list of rooms.
– cleanup is completed.
– Visible mold on wall above adjoining room door of room 104. Approximately 4″ by 1′. Corrected on site: room closed until repaired.
– Visible mold on two tiles above shower in room 111. Aproximately 1″ square on two tiles. Corrected on site: removed tiles for replacement or repair.
– Wall under vanity has a black scuff mark in room 156.
– Lodging notice of non-compliance issued. Follow up inspection scheduled for July 20.
– Lodging voluntary closure statement issued. Room 104 closed until mold is cleaned out. Reinspection currently scheduled for July 20.
