Saline County Food Establishment Inspections May 29-June 3, 2015

InspectionsFood Establishment Inspections conducted in Saline County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from May 29 through June 3, 2015.

Gutierrez Restaurant, 640 Westport (June 2)
– Lids on chip containers are covered in dried on food debris, plastic pan stored on clean dish rack has old label on outside of container, cutting boards stored on clean dish rack stained black. Corrected on site: moved to ware washing area to clean.
– Homemade hot sauce, cooked peppers, and raw fish inside southwest make table reach in cooler not cold enough. Corrected on site: voluntary destruction.
– Open package of cheesecake not date marked. Corrected on site: dated.
– Southwest make table reach in cooler not cold enough. Corrected on site: Removed and voluntary destruction of foods, calling for service.
– No thermometer inside southwest make table reach in cooler.
– Case of tortillas setting on floor of store room.
– Employee shredding lettuce prior to washing. Corrected on site: instructed to wash prior to cutting.
– Cracked lid on container of chicken. Corrected on site: replaced with intact lid.
– No chlorine test strips available. Corrected on site: supplied with test strips.
– Portable fan aimed at cooks line and wait staff area are full of dust. Front vents of hood are full of dust.
– Cold water will not turn off completely at cook’s line handwashing sink. Handle missing on prep cook’s area handwashing sink.
– Upon arrival trash can between steam table and make table is full from last night. Corrected on site: employee emptied trash.
– Wall behind stove is covered in dried on food debris.
– Ceiling tile missing above pass through window on the north side exposing insulation. HVAC return air vent not covered exposing dirty filter.
– Light above north make table and mechanical warewashing area not shielded or covered.

Hong Kong Buffet, 2515 Market Place (June 2)
– Approximately 5 per 200 plates stored as clean in buffet line have dried on food particles. Corrected on site: Moved to warewashing to be rewashed. Educated on steps to reduce
occurance of food particles on dishware.

Jade Bakery & Hors d’oeuvres, 336 S. Santa Fe (May 28)
– No Violations

Jade Bakery & Hors d’oeuvres, 206 E. Walnut (June 3)
– No Violations

Mokas Coffee, 916 E. Crawford (June 2)
– Pan of gravy cooling inside upright true reach in cooler while covered with a lid. Corrected on site: move lid to side to let heat escape.
– No thermometer inside front make table reach in cooler, drive through reach in cooler or kitchen make table reach in cooler.
– Cases of coffee setting on floor in hall storage area by office.
– Ice scoop handles stored inside front register area and drive through area ice machines are touching the ice. Scoops in front register area drink mixes are stored with handles touching the mix.
– Ceiling above grill is peeling paint and covered in dust.

Spangles #15, 1720 W. Crawford (May 28)
– The food employee changed the time on the control monitoring tag strip for the cut tomatoes from 5:15 to 9:15 p.m. but didn’t discard the remaining cut tomatoes which were tested at 55 to 64. Their written policy for time as a Control stipulates that under number 5 in their book to”write in new start time and end time” which was done but under their #6, “If a product is still on the line when the 4 hour time elapses”, they would, under # 7. “Remove product and discard.” Corrected on site: discarded tomatoes and reloaded with fresh batch.
– The food, dial type, measuring device has a shaft sensor that can not accurately measure thin patties. Corrected on site: inspector provided one to manager.
– One closed full box of unpeeled whole lemons are sitting on the floor in the walk in cooler. Manager to see that they get elevated off the floor.
– Metal food containers used for holding foods at make table after recent washing and cleaning were stack wet above the 3 compartment sink and not allowed to air dry.
– A return air grate in the ceiling in the center of the kitchen has a build up of dust dirt.

Texas Red’s Catering, 3085 W. State (May 29)
– Underneath the slicer table, there was a white bucket with clear liquid and wiping clothes with no label. According to Owner, the clear liquid is Chlorine Sanitizer. Corrected on site: labeled.
– Wiping clothes were stored in 0 parts per million chlorine sanitizer. Corrected on site: Remixed to 100 parts per million chlorine sanitizer.
– No chlorine sanitizer test strips in the facility. Corrected on site: supplied by inspector.
