Saline County Food Establishment Inspections, October 1-7, 2015

inspectionsFood Establishment and Lodging Inspections conducted in Saline County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from October 1 through October 7, 2015.

Food safety and lodging inspections are unannounced, and inspection results represent only those conditions found in the establishment at the time of the inspection.

Hickory Hut, 1617 W. Crawford St. (October 6)
– Coleslaw and potato salad inside Continental make table not cold enough. Corrected on site: foods moved to walk-in Cooler to quick chill. Discontinued use of Continental reach-in cooler, now using walk-in cooler and other available reach-in coolers.
– Plastic lid on bus tub used for food storage is cracked. Corrected on site: diposed of lid.
– Interior divider of ice machine has accumulation of mold.
– Front register area handwashing sink’s sewage line has slow drip into a bucket.
– HVAC vents in kitchen have accumualtion of dust.

Iron Skillet, 2125 N. 9th St. (October 7)
– Open beverage on shelf above clean dishes in warewashing area. Corrected on site: person in charge disposed of beverage.
– Prep cook slicing cantaloupe without washing first. Corrected on site: discontinued slicing and washed melons.
– Stew and stroganoff inside store room hot holding cart not hot enough. Corrected on site: reheated in steamer to approriate temperature
– Open container of cottage cheese not dated when opened. Corrected on site: dated October 5/October 11
– No thermometer inside Metro hot holding cart and front gauge is broken.
– Under side of blade guard on slicer has an accumulation of dried food debris. Corrected on site: cleaning in place.
– Handwashing sink next to 3 vat sink faucet sprays water from side where eyewash apparatus has fallen off and expo area handwashing sink is slow draining.

La Quinta Inn & Suites, 201 E. Diamond Drive (October 5)
– Turnovers for self service on breakfast bar not protected with packaging on sneeze guard. Corrected on site: covered with plastic wrap.
– Yogurt and milk in reach-in coolers not cold enough. Corrected on site: discontinued use of coolers for potentially hazardous foods and called for service. Disposed of yogurt and milk. Facility has 2 other reach-in coolers.
– Fan setting on top of west Hot point reach-in cooler full of dust and aimed at food prep area.
– Pillows stored on top shelf touching food grade zip type bags. Corrected on site: moved pillows.

Schlotzsky’s Deli #1813, 2480 S. 9th St. (October 5) Follow-up Inspection
– All portable fans in kitchen full of dust. Repeat violation.
– Case of single service cups on floor, per person in charge in process of cleaning shelf and noon rush interrupted, will put on shelf after rush. Repeat violation.
– Water leak in wall between bakery and front register area. Floor and wall are wet to touch and sight. Repeat violation. Per person in charge, a contractor has been hired to repair.
– Dining room trash receptacle cupboard has accumulation of dried on garbage on bottom shelf outside of trash receptacle.
– Wall between bakery and front register area is wet and crumbling along juncture of floor and wall. Repeat violation.
– Floor in front of 3 vat sink not cleaned at closing per person in charge.
– All food contact surfaces in good repair and food grade
– All foods date marked correctly.
– Bread rack and can opener clean to site. Per person in charge, bread rack cleaned daily and can opener as needed.
– Chemicals stored appropriately.
– Fly strips located in appropriate locations. A few young flies by drain in bakery area. Drains have been professionally cleaned and follow up is scheduled at closing on date of inspection.
– HVAC vents are clean to site.
– Lids to make tables have been repaired.
– Mops are hanging to dry walls and ceiling clean to site.
– No adulterated foods.
– Nothing stored inside basins of hand washing sinks.
– Sheet pans under portable steam tables are clean to site.

St. Mary’s Elementary School, 304 E. Cloud St. (October 7)
– No violations.
