Saline Co. Food Establishment & Lodging Inspections, December 24, 2015 – January 6, 2016

inspectionsFood Establishment and Lodging Inspections conducted in Saline County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from December 24, 2015 through January 6, 2016.

Food safety and lodging inspections are unannounced, and inspection results represent only those conditions found in the establishment at the time of the inspection.

Applebee’s #4, 2875 S. 9th St. (January 5) Complaint Inspection
– Grilled onion temperature at 48.6 degrees F. Cut tomatoes temperaure at 59.6 degrees F. Hashbrowns temperature at 51.0 degrees F. Raw salmon temperature at 45.8 degrees F. Raw egg out of shell temperature at 49.9 degrees F. Onions slices prepared off site temperature at 52.2 degrees F. Riblets temperature at 51.7 degrees F. Babyback ribs temperature at 53.9 degrees F. 7 ounce steaks temperature at 49.8 degrees F. Ribeyes temperature at 46.0 degrees F. Grill drawer temperature between 35-41 degrees F. Corrected on site: voluntary disposal of all items.  (Note: all potentially hazardous foods must be at a temperature of 41.0 degrees F or below).
– Cracked plastic salad container in use in salad south make table. Corrected on site: put salad in container free of imperfections that is easily cleanable and disposed of cracked container.

Carlos O’Kelly’s, 2259 S. 9th St. (December 29) Regular Inspection
– Dishwasher handled clean dishware after loading dirty dishware into racks for warewashing Corrected on site: instructed and educated when to wash.
– Open gallon of milk inside salsa True reach-in cooler not dated when opened, unknown when milk was opened. Corrected on site: voluntary destruction.
-Four spatulas with edges cut and missing pieces of plastic. One plastic funnel has an approximately 3 inch crack down the side. Corrected on site: items removed from use.
– Bottom door seal on cook’s line True reach-in cooler coming off of the door.
– Plastic pans stored as clean on clean dish rack next to walk-in cooler have remnants of old date mark stickers on pans. Corrected on site: moved to warewashing to be cleaned.
– Area behind wall mounted dicer covered in dried on food debris.
– Plastic pans stored nested together with water between pans on clean dish rack next to walk-in cooler.
– Purse and slippers stored inside cabinet in bar area touching package of single use cups, coat stored on top of counter in bar.
– Wall behind mechanical warewashing area falling apart at the baseboard.

Carol Lee Donuts, 104 S. 5th St. (January 5) Regular Inspection
– No test strips available for chlorine.
– Open cup of water on shelf above above food prep area.
– Containers of powdery substances not labeled with common name.
– No policy for using time as public health control for Kolaches or Tacos. Corrected on site: made policy.
– Kolaches on kitchen counter top and donut case not marked with time removed from 135 degrees of above raised yeast dough setting at room temperature for an unknown amount of time. Corrected on site: moved counter top Kolaches to refrigeration and donut case will be disposed at 10:30 a.m. Dough voluntary disposed.
– Nut toppings and sprinkles stored inside “Sterlite” filing drawers. Corrected on site: moved to food grade container.
– Lid on old fashion donut mix bin cracked and repaired with unknown substance and not smooth and easily cleanable.
– No thermometer available for measuring food temperatures.
– Scoop inside flour bin covered in dried on food debris. Corrected on site: moved to warewashing to be cleaned.
– Vents in hood and fan above fryer area covered in grease.
– No door on toilet room in back room.
– Ceiling tiles above food prep table and floor in front of proofer in ill repair.
– Black metal spray bottle of golden colored slick substance not labeled with common name.
– Black metal spray can stored on top of prep table in kitchen. Corrected on site: moved above handwashing sink.
– Notice of non-compliance issued. Follow up inspection scheduled for January 15.

Comfort Suites, 715 W. Schilling Rd. (December 29) Regular Inspection
– Non stick electric skillet has 40% of nonstick surface missing. Corrected on site: removed skillet from use.
– Floor fan in kitchen area full of dust.

Coop’s Pizzeria, 123B S. Santa Fe Ave. (December 30) Regular Inspection
– Meat balls and sausage pieces in walk-in cooler not dated when removed from freezer. Corrected on site: dated December 26 through January 1.
– Open box of whipping cream and Alfredo sauce in make table not dated when opened and/or made. Corrected on site: dated December 26 through January 1.
– Cracked lid on flour container. Corrected on site: disposed of lid.
– No thermometer inside Avantco make table reach-in cooler or walk-in cooler.
– Microwave interior top has peeling surface.
– Pizza boxes setting on floor between Avantco make table and oven. Corrected on site: moved off of floor.
– Handle for cold water missing on 3 vat sink faucet.
– No hand drying provisions available at handwashing sink in kitchen. Corrected on site: supplied with paper towels.
– Personal coat hanging on mixer.
– One live roach on floor running from mixer to under hand washing sink. Corrected on site: killed roach.
– Bus tub of standing water with 6 dead roaches under 3 vat sink.
– 3 sticky traps full of dead roaches throughout establishment.
– “Ultra Kill” Ant and Roach spray and “Hot Shot” Ant and Roach spray found in establishment, employees do not know where it is used. Corrected on site: disposed in trash.
– 2014-2015 license posted.
– Notice of non-compliance issued. Follow up inspection scheduled for January 9.

Exceptional Caterers, 219 S. 3rd St. – Suite 300 (January 5) Regular Inspection
– No Violations.

Jumpin’ Joe’s Family Fun Center, 1634 Sunflower Ln. (December 29) Regular Inspection
– Door to ice machine has loose and broken interior cover.

Kansas Highway Patrol Training Center, 2025 E. Iron Ave. (January 6) Follow Up Inspection
– No Violations.

Mokas Coffee, 2424 S. 9th St. (December 30) Regular Inspection
– No chlorine test strips available. Corrected on site: supplied partial roll of chlorine test strips.
– No detectable chlorine sanitizer in coffee area wiping cloth storage container. Corrected on site: remade using quaternary ammonia to 200 ppm.
– Bin of sugar stored on shelf below bakery prep table uncovered.
– Raw shell eggs temperature at 53.3 degrees F, inside walk-in cooler temperature at 54.4 degrees F. Corrected on site: voluntary destruction of egg shells.
– Raw bacon temperature between 51.9- 53.2 degrees F. Butter blend packages temperature at 54.0 degrees F. Chicken noodle soup temperature at 53.7 degrees F. Corn beef temperature at 52.5 degrees F. – Manual wedging equipment covered in dried on food debris. Corrected on site: moved to mechanical warewashing area.
-Interior of coffee area make table reach-in cooler has dried on milk.
– Light inside walk-in cooler not shielded or protected.
– Both south doors have gaps along sides and bottom.
– Ceiling leaking above south wall unused equipment storage area across from dry storage.
– Unused equipment both working and non working stored throughout establishment and collecting dust.
– Spray bottle of blue liquid in mop sink room not labeled with common name. Corrected on site: unknown liquid disposed.
– Container of clear liquid on counter in coffee bar area not labeled with common name. Corrected on site: labeled sanitizer.
– License not posted and visible to consumers.

Opportunity Now, 219 S. 3rd St. (January 5) Regular Inspection
– No Violations.

Pinoy Po Tayo Café, 1315 S. Santa Fe Ave. (December 29) Complaint Inspection
– Cook has healing burn on hand that was uncovered during food preparation. Corrected on site: covered wound and gloved.
– Raw shell eggs stored in door of kitchen reach-in cooler above bag of noodles. Corrected on site: moved raw shell eggs to bottom shelf.
– Using large meat thermometer for food. Corrected on site: provided with thin probe thermometer for measuring food temperatures.
– Container of single service forks stored with handles jumbled in two directions, not protecting the lip contact surface.

Rib Crib #76, 3025 S. 9th St. (December 29) Complaint Inspection
– Old mouse droppings in electrical room. Corrected on site: cleaned up droppings.

Rod’s Total #2, 1339 N. 9th St. (January 5) Follow Up Inspection
– No Violations.

Starbucks #19806, 2315 S. 9th St. (December 29) Follow Up Inspection
– No Violations.
