Food Establishment and Lodging Inspections conducted in Saline County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from January 14 through January 20, 2016.
Food safety and lodging inspections are unannounced, and inspection results represent only those conditions found in the establishment at the time of the inspection.
Carol Lee Donuts, 104 S. 5th St. (January 19) Follow Up Inpsection
– No test strips available for chlorine sanitizer.
– Dough setting in mixer bowl since 8:00 a.m. per person in charge. Temperature at 72.9 degrees F at approximately 9:15 a.m. Corrected on site: moved to reach-in cooler.
– Lid on old fashion donut mix and danish mix is cracked and was repaired with an unknown substance and is not smooth and easily cleanable.
– No thermometer available for measuring food temperatures.
– Vents in hood and fan above fryer area covered in grease.
– Whip attachment of mixer in sink basin of kitchen handwashing sink. Corrected on site: removed from basin and put in 3 vat sink.
– No door on toilet room in back room. Owner plans on removing toilet.
– Ceiling tiles above food prep table in front of proofer in ill repair.
– Black metal spray bottle stored above handwashing sink not labeled with contents. Corrected on site: labeled “oil”.
– Notice of non-compliance issued. Follow up inspection scheduled for March 18.

– Wet wiping cloths setting on counter top next to front handwashing sink.
Coyote Canyon, 2351. S 9th St. (January 19) Complaint Inspection
– Round hanging thermometer in walk-in cooler reads 22 degrees F and enclosed horizontal thermometer is broken. Inspectors thermometer reads 42.4 degrees F.
– Open glass of pop on window ledge by bakery prep table.
– Raw shell eggs setting on shelf above green chili in meat cutting room. Raw brauts setting on top of case of hot dogs and salsa on shelf below in main area of walk-in cooler. Corrected on site: moved raw shelf eggs below green chili and brauts to bottom shelf.
– No detectable sanitizer in bakery area wiping cloth bucket.
– Case of whip topping base setting on floor in bakery. Plastic buckets of food setting on floor in walk-in cooler.
– Lemon slices for self service on beverage bar not covered or protected.
– Uncovered bin of chicken coating and open bag of pork seasoning in dry storage room with mouse traps.
– Roasted jalapeno pepper temperature at 119 degrees F on ethnic food bar for approximately 3 hours. Corrected on site: reheated to 165 degrees F.
– Temperature of hamburgers stored inside north hot holding drawer in grill area 122 degrees F for 30 minutes. Corrected on site: reheated to 165 degrees F.
– Crab salad temperature at 46.1 degrees F. Potato salad temperature at 47.3 degrees F. Cut cantaloupe temperature at 49.0 degrees F on small salad bar for approximately 2 hours per person in charge. Corrected on site: moved back to walk-n cooler to chill.
– Ham pieces dated for disposal on January 17 on salad bar to stock. Corrected on site: voluntary disposal.
– Pico inside walk-in cooler not date marked. Per person in charge, pico made on Friday, January 15. Corrected on site: dated for disposal on January 21.
– Chicken breading and mixed greens plastic pans have corners chipped off. Corrected on site: moved foods to intact containers.
– No thermometer in grill hot holding drawers.
– White round plastic containers stored as clean on dish rack in kitchen prep area have old date mark stickers on outside of containers and are nested together. Corrected on site: moved to warewashing.
– Fan above handwashing sink and in warewashing area full of dust.
– Black plastic pans on clean dish rack in kitchen prep area nested together with water between pans.
– Handwashing sink in meat cutting room full of cleaning devices and a glass.
– Unisex toilet room trash receptacle not covered.
– One light bulb in center light fixture in dry storage room not shielded or protected.
– Floor along south and east walls in bakery covered in debris. Ledge below electrical boxes in dry storage room have accumulation of old mouse droppings. Light in grill area above prep table covered in grease and dust. HVAC vents above dessert prep area full of dust.
– Handwashing sink in meat cutting room covered in mold.
– Bottle of bleach setting on dish drain board above and next to clean dishware in warewashing room. Corrected on site: moved to floor.
– Three bars of bait setting on floor by water heaters. Corrected on site: moved to trash.
– Notice of non-compliance issued. Follow up inspection scheduled for January 29.
