Food Establishment Inspections conducted in Dickinson County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from January 15 through January 21, 2016.

Food safety and lodging inspections are unannounced, and inspection results represent only those conditions found in the establishment at the time of the inspection.

Herington High School, 1401 N. D St. – Herington (January 20) Regular Inspection
– Spots of mold on racking in walk-in cooler. Build up of dust on fan covers in walk-in cooler. Build up of dust on fan cover of fan blowing air on clean dishes at exit end of mechanical dishwasher.

Hilltop Community Center, 2 S. A St. – Herington (January 20) Regular Inspection
– Ice scoop setting on top of ice machine that has dust on it. Corrected on site: ice scoop was moved to kitchen.
– Two lidded metal pans with swiss steak at 112 degrees F and 131 degrees F were stacked on top of each other in kitchen two door reach-in cooler. Corrected on site: pans placed in ice bath.
– In kitchen reach-in cooler, ham and beans at 52.5 degrees F, green beans at 53.1 degrees F at 11 a.m. Ambient temperature of reach-in cooler was at 53.4 degrees F. Cook said temperature was at 40 degrees F at 7 a.m. on day of inspection. At approximately 10 a.m., hot salisbury steak was placed in reach-in cooler. Corrected on site: foods requiring 41 degrees F and below moved to milk bunker (ambient temperature at 40 degrees F). Swiss steak removed from cooler and placed in ice bath.
– In two door reach-in cooler in dining area: ham temperature at 44.9 degrees F, ambient temperature of cooler at 42 degrees F. Corrected on site: ham moved to milk cooler.
– In kitchen two door reach-in cooler, tomato soup dated with January 12 prep date. Corrected on site: soup discarded.
– Kitchen two door reach-in cooler ambient temperature at 53.4 degrees F.
– On clean pan rack, knives, forks and spoons were in container with lip contact surface presented up. Corrected on site: items moved to another container with all handles going the same direction.
– Notice of non-compliance issued. Follow up inspection scheduled for January 30.
