Food Establishment and Lodging Inspections conducted in Saline County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from January 28 through February 3, 2016.
Food safety and lodging inspections are unannounced, and inspection results represent only those conditions found in the establishment at the time of the inspection.
Coyote Canyon, 2351 S. 9th St. (February 2) Follow Up Inspection
– Raw brauts setting on shelf above ready to eat salsa inside walk-in cooler. Corrected on site: moved raw brauts to meat cutting area with other raw meat.
– No detectable sanitizer in kitchen wiping cloth buckets. Corrected on site: remade to 200 ppm.
– Corner of lid chipped off on container of salsa. Corrected on site: replaced with intact lid.
– Fan above handwashing sink aimed at 3 vat sink full of dust. Fan aimed at mechanical warewashing area covered in grease.
– Dishwasher nested white round containers as they come out of mechanical dishwasher. Corrected on site: educated and unstacked to dry.
– Black plastic pans nested together with water between pans on clean dish rack in kitchen.
– Light in grill area above prep table covered in grease and dust.
Dillons Store #74, 2350 Planet Ave. (February 1) Regular Inspection
– In retail self service case, raw salt pork on shelf above cooked whole hams. Corrected on site: moved.
– In chinese kitchen, rice stored in non-food grade container. Corrected on site: rice placed in food grade container.
– In chinese kitchen, six pans stacked as clean had sticker residue on them. Corrected on site: pans placed in 3 compartment sink to be rewashed.
– In produce department, colander of strawberries in 3 vat sink that is directly plumbed to sewer. Corrected on site: removed strawberries from sink and will use produce sink that is indirectly plumbed or maintain product above flood rim of sink.
– Back room double door on west wall south end have gap between them.
– In meat walk-in cooler, ceiling has two places by east compressor that paint is peeling.
– In deli department cabinets under slicers, spray bottles of cleaners stored with deli tissue, bags and tongs. Corrected on site: items separated, no sign of leakage found.
Great Wall Chinese Restaurant, 671 S. Broadway Blvd. (February 3) Complaint Inspection
– Clean and cut broccoli pieces stored inside cardboard box inside walk-in cooler. Corrected on site: placed broccoli in soy sauce bucket.
– Open cup of coffee on clean dish rack. Corrected on site: disposed of coffee.
– Bus tub of egg rolls inside Artic Aire reach-in cooler not date marked when made. Corrected on site: dated February 1 made.
– Salt shaker has duct tape across half of shaker lid. Corrected on site: removed tape and cleaned.
– Interior bottom of make table has accumulation of food debris. Corrected on site: cleaned in place during inspection.
– Stainless steel pans nested together on clean dish rack with water between pans.
– Soap dispenser empty at handwashing sink. Corrected on site: supplied with soap.
Huddle House, 2250 N. Ohio St. (February 3) Reopening Inspection
– No Violations.
Rendesvouz Bar, 249 N. Santa Fe Ave. (February 2) Regular Inspection
– Pork and mashed potatoes thawing on counter top. Corrected on site: moved to reach-in cooler to thaw.
– Open carton of half and half dated January 26 opened. Corrected on site: voluntary destruction.
– Trash receptacle in ladies toilet room not covered.
