Saline Co. Food Establishment & Lodging Inspections, September 22-28, 2016

inspectionsFood Establishment and Lodging Inspections conducted in Saline County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from September 22 through September 28, 2016.

Food safety and lodging inspections are unannounced, and inspection results represent only those conditions found in the establishment at the time of the inspection.

Central Kansas Foundation, 1809 S. Ohio St. (September 27) Regular Inspection
– Carton of “Sysco” brand coleslaw open on September 10. Manufacturer’s use by date of September 18. Corrected on site: voluntary destruction.

Daimaru Japanese Steakhouse, 3045 S. 9th St. (September 27) Complaint Inspection
– Thawing package of tripe in bucket of water setting on floor. Corrected on site: moved to food prep sink and turned water on to thaw under running water.
– Reduced oxygen packaged fish inside 2 door True reach-in cooler prep area thawing since morning on day of inspection without a cut in package. Corrected on site: cut package open.
– Cutting boards in sushi area are stained black and scored.
– Employee uncovered beverage setting on shelf above in use food prep sink. Employees eating and drinking at expo area counter top. Corrected on site: beverage moved and employees educated to use only designated area.
– Raw steak stored above dressing in True reach-in cooler next to grill. Corrected on site: moved to bottom shelf.
– Tubs of cooked rice cooling inside walk-in cooler covered with plastic wrap. Corrected on site: educated and uncovered corners.
– Case of to-go containers setting on floor of dry store room.
– Cracked plastic beverage glass stored as clean next to pop fountain in register area. Bus tub full of rice has cracked corner. Corrected on site: removed dishware from use.
– Wet wiping cloth stored on counter of expo area. No detectable sanitizer wiping cloth storage bucket in register area. Corrected on site: remade.
– Interior of microwave door is rusting and crumbling.
– No thermometer inside True reach-in cooler next to grill.
– No soap available at handwashing sink in center food prep area. Corrected on site: supplied with soap.
– Approximately 20 old mouse droppings in cabinet below north handwashing sink in sushi area. Lights and HVAC vents in kitchen covered in dust.
– Bowl used as scoop stored inside bucket of flour in sushi area.
– Stainless pans on clean dish rack nested together with water between pans.
– Employee cutting broccoli straight from case. Per employee, broccoli not washed prior to cutting. Corrected on site: educated.
– Handles of case coolers in sushi area covered in residue.

Huddle House, 2250 N. Ohio St. (September 26) Complaint Inspection
– Interior of east microwave has a rusted and crumbling front door.
– No detectable sanitizer in mechanical warewasher after washing rack of plates. Corrected on site: primed sanitizer until reached 100 ppm chlorine.
– In kitchen area, wiping cloths stored inside of soap and water instead of sanitizer. Corrected on site: changed to sanitizer.
– Case of napkins setting on floor of caged store room.
– Stainless pans on clean dish rack nested together with water between pans.
– Knife covered in dried on potato residue hung on knife rack. Corrected on site: cleaned knife rack in place and moved knife to warewashing area.
– Lids for pitchers stored on clean dish rack have mold on the surface. Corrected on site: moved to warewashing.

Jimmy Joe’s Snack Bar #2, 411 E. Walnut St. (September 27) Regular Inspection
– Interior divider of ice machine has an accumulation of mold.
– Floor fan aimed at food prep area is full of dust.
– Lights in kitchen and above coffee maker not shielded or protected.

Jim’s Country Style Chicken, 649 S. Broadway Blvd. (September 28) Regular Inspection
– Interior divider of ice machine has accumulation of mold.
– Wet wiping cloths setting on counter tops through the kitchen.
– Cases of single use lids and bowls setting on floor under shelving.
– Guard of tenderizer is cracked and taped together. Corrected on site: discontinued use ordering new.
– Can opener has dried on food debris on cutting blade.
– Case of eggs setting on floor of walk-in cooler.
– Plastic beverage glasses stored as clean next to pop fountain area nested together with water between glasses.

Legends Sports Bar & Grill, 2110 W. Crawford St. (September 26) Follow Up To Administrative Order
– Gravy cooling in covered 4 inch pans that are stacked on top of each other inside Roper reach-in cooler. Corrected on site: educated.
– Dried on food debris on dicer blades (repeat violation). Corrected on site: moved to warewashing.

McDonalds, 2236 S. Planet Ave. (September 26) Follow Up Inspection
– No covered trash in playroom area unisex toilet room with a changing table (repeat violation). Person in charge is ordering covered container.
– No thermometer inside breakfast reach-in cooler (repeat violation). Person in charge ordering thermometers.
– Wet wiping cloths setting on prep counter tops in grill and sandwich making area (repeat violation). Corrected on site: educated and put in sanitizer.

Rod’s Total #1, 1401 S. Santa Fe Ave. (September 22) Regular Inspection
– Cleaners stored on top of microwave. Corrected on site: moved cleaners.
– No business name on ice bagged in store. Per person in charge, labels ordered.
– No soap available at handwashing sink next to ice machine. Corrected on site: supplied soap.
– Case of single service cups setting on floor by tables.
– Handwashing sink next to ice machine has case of returns on top of basin. Corrected on site: moved returns.
– Lights in walk-in cooler not shielded or protected.

Sonic Drive-In, 310 S. Santa Fe Ave. (September 27) Complaint Inspection
– 3 bins of dry powdery mix not labeled with common name in south storage area.
– Transfer trays have cracked corners. Corrected on site: covered in plastic wrap and ordered new trays.
– Dicer stored as clean on bottom shelf of prep table has dried on food debris on blades. Corrected on site: moved to warewashing.
– Fan in prep area is covered in dust.
– Plastic containers and stainless pans stored on clean dish rack nested together with water between pans.
