Linda was chosen for her part in Saturday Night Alive, a service provided by Emmanuel Christian Center. The focus of the weekly event is to give back to the community, every week hundreds of people go to Emmanuel for a warm home cooked meal.
Mrs. Henningsen has a passion to serve and has been helping organize this weekly event for 11 years. When we sat down and talked she told of the great need that there is in this community for these meals. Approximately 10,000 meals were served last year, Mrs. Hennigsen stated, “We try to make the foods nutritionally good, we try to make comfort foods.” She further stated, “For many families this is the only warm meal they are going to get for the week, we make enough so they can have seconds, thirds or even fourths.”
The need for this weekly meal is high, Mrs. Henningsen told the POST she witnessed a 12 year old girl going table to table picking up scraps of left over rolls and other dry food products and putting them into her purse to take home to her family.
Mrs. Henningsen along with her volunteer staff put great pride into the meals they serve. They even make sure to have low calorie food provided and special desserts for those who are diabetic. Mrs. Henningsen also spoke of how they provide special meals for the holidays, “ We did around six big turkeys for Thanksgiving and for Christmas we made brisket!”, she stated.
