Dickinson County Food Establishment Inspections June 12-18, 2015

InspectionsFood Establishment Inspections conducted in Dickinson County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from June 12 through June 18, 2015.

Brown Memorial Scout Camp, 1935 Lane – Abilene (June 12)
– Combination pizza and pepperoni pizza 119 at serving line not hot enough. Corrected on site: pizza was served out. Discussed using time as control for pizza since it is prepared and served out normally within 2 hours. Inspector assisted manager with writing procedure.
– Inch gap at bottom and between two doors by the walk in cooler.
– Boxes of bananas and cereal setting on floor in storage room.
– Inside handles of cabinets dirty with build up of soil. Fan covers in walk in cooler have build up of dust.

La Fiesta, 2210 N. Buckeye – Abilene (June 12)
– In front reach in cooler, raw shrimp setting on shelf above cooked ready to eat broccoli/cauilflower. Corrected on site:
shrimp and broccoli/cauliflower moved.
– In front reach in cooler, raw chicken setting on shelf above raw chorizo. Corrected on site: chicken and chorizo moved.
– Three metal pans on clean pan rack dirty with food debris. One metal pan had approximately 10 cubes of potato between
stacked pans. Corrected on site: three pans moved to warewashing area.
– Opened containers of spices not covered in food prep room. Corrected on site: lids put on containers.
– Ledge of ice machine has build up of dust. Fan covers on walk in cooler have build up of mold.
– Men’s bathroom door not self closing.
– Paint peeling from ceiling in walk-in cooler. Paper covering from sheet rock is peeling in food prep room.
