Food Establishment Inspections conducted in Saline County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from June 18 through June 24, 2015.
Holiday Inn Salina/Burger Theory, 3145 S. 9th (June 23)
– Employee eating in kitchen prep area. Corrected on site: moved to designated area to eat.
– Employee brushing teeth at hand washing sink. Corrected on site: discontinued using sink for any purpose other than hand washing, employee educated.
– Homemade ranch dressing not dated properly. Corrected on site: re-dated to reflect correct dates.
Imperial Garden, 2259 S. 9th – Suite 152 (June 23)
– Person in charge used bare hands to stir white rice. Corrected on site: person in charge voluntarily discarded rice that was touched.
– Two plastic containers of white rice were cooling in kitchen. One container was at 110 degrees, the other at 147 degrees. Person in charge indicated that rice needed to cool down below 140 degrees to fry. Corrected on site: rice was fried.
– Egg rolls and chicken in warming pans not hot enough. Corrected on site: both items re-heated.
– Cream cheese mixture in walk-in cooler was opened and was not dated. Employee said cream cheese mixture was made June 21st. Corrected on site: labeled with date.
– Establishment uses time as control, they do not have written procedure. They do have by the grill, a paper they check at 10:00 a.m., 2:00 p.m., and 6:00 p.m. That is the time food is to be discarded and new is made.
– In back room under the rice warmer, there was a spray bottle with a blue liquid in it that did not have a common name. Employee said it was degreaser. Corrected on site: employee wrote degreaser on bottle.
– In deep plastic containers, white rice was cooling on counter with lids on them, stacked on top of each other. Corrected on site: rice was cooked, employee educated on proper cooling methods.
– On cart by the grill, a yellow squeeze bottle did not have a common name on it. Employee said it was cooking oil. Corrected on site: employee labeled with common name.
– Two plastic containers and one shaker, located on cart shelf not labeled with common name. Corrected on site: employee labeled with common name.
– In back room, three white vinegar containers not labeled with the common name of ingredient stored in them. Employee identified as having soy sauce, sesame oil and cooking oil in them. Corrected on site: employee labeled with common name.
– Wiping cloth buckets that were storing cloths each had bleach sanitizer solution. Corrected on site: employee re-made solution.
– On cart by grill, container of sugar had measuring spoon stored in it with the handle touching food. Corrected on site: employee removed spoon.
– In back room, container of corn starch had a container with a handle touching the corn starch. Corrected on site: employee washed item.
– The unisex restroom did not have toilet tissue.
Kwik Shop #742, 657 Fairdale (June 22)
– In walk in cooler, case of raw eggs sitting on top of cases of beers. Corrected on site: person in charge moved eggs.
– In walk in cooler, the following items were date marked for more than 7 days: cheese dogs, rancho dogs, fajita dogs and jalapeno dogs. Corrected on site: person in charge date marked with correct date.
– Muffins, brownies, cookies and raspberry cream cheese croissants in doughnut case did not have ingredients listed. Employee said they used to have tags that hung from side of case.
– Exterior door in storage room has a 1/2″ gap on right side.
– In second restroom, faucet has low water pressure.
– Faucet is leaking at three compartment sink.
– Several stained tiles in storage area.
– Single cabinet door has loose hinge at self serve area.
– On the floor underneath west windows, is dust and dead bugs.
– Trash on bottom shelf of cart in storage area.
– Two bags of single serve chips behind cartons of pop concentrate in storage room.
– On store shelf, box of Claritan 24 hour with 5 tablets expired 4/15. Box of omperazole delayed release tablets 20 mg with 14 tablets expired 5/15. Corrected on site: person in charge removed from shelf and relocated to bin of outdated items.
Quality Inn & Suites/Legends Sports Bar & Grill, 2110 W. Crawford (June 24)
– No soap available at employee’s toilet room hand washing sink. Corrected on site: supplied soap.
– Toilet unclean inside employees toilet room.
– Meat slicer has remnants of sliced beef on sliced meat exit table, person in charge indicates table not used since previous day. Corrected on site: cleaned in place.
– Homemade tartar sauce, hard boiled eggs, homemade salsa, grated cheese mix, diced tomatoes, american cheese slices, swiss cheese slices in make table reach in cooler not cold enough. Corrected on site: voluntary destruction of items.
– Au jus inside walk-in cooler not date marked. Corrected on site: dated properly.
– Reach-in cooler not cool enough. Corrected on site: called for service, moved and/or disposed of contents.
– Single service plates and cups setting on floor in ice machine room.
– Stainless steel steam table pans are nested together with water between pans on clean dish rack.
– Fan on top of hot point reach-in cooler aimed at salad make table and fan aimed at kitchen prep area are both full of dust.
– Previous nights trash not removed at closing, setting in back room with pungent odor and flies.
– Ceiling in ice room in ill repair.
– Trash, steam table pans, and meat slicer not cleaned at closing on day prior to inspection.
Sam’s Club #6424, 2919 Market Place (June 23)
– Container of salsa without date in meat walk in cooler. Employee said she did not know when was opened. Corrected on site: person in charge voluntairly discarded.
– One 6 lb. can of Hunts tomato sauce that had dent in lip of can. Corrected on site: person in charge voluntarily discarded.
– Six other canned tomato products that were damaged. Corrected on site: person in charge voluntarily discarded.
– In meat cutting room, food slicer had dried on food debris on cutting blade and holding tray. Person in charge indicated the closing employee from previous night did not wash it.
– In meat cutting room, one plastic lid that had old writing on it from previous items stored in it. Corrected on site: person in charge put lid in three compartment sink.
– In the deli, commercially prepared pizza sauce not holding at required temperature. Employee said sauce was opened and put into to heat three hours prior. Employee said knob got bumped. Corrected on site: employee turned temperature up to reach required temperature.
– In self serve prepackaged lunch meats and cheese: Wright raw bacon was at 48 degrees, and Castle Wood sliced pepper jack/mild cheddar cheese was at 60 degrees. Employee said items just came in on truck and were stocked, then cooler went into defrost mode. These temperatures were taken at 9:07 a.m. At 10:19 a.m., raw sausage links were at 42.4 degrees and internal temperature of sliced ham was at 43 degrees. Corrected on site: person in charge had employee check and pull products that were not at 41 degrees. Ambient of cooler was 38.3 degrees.
– Two containers of blue cheese crumbles were opened and not dated. Employee said containers were opened June 20th. Corrected on site: employee correctly dated cheese.
– In deli, spray bottle of sanitizer above self serve cooler. Corrected on site: person in charge moved bottle.
– In bakery, spray bottle of sanitizer had nozzle pointing at clean dishes on drying area of 3 compartment sink.
– In deli, bottle of yellow liquid in squeeze bottle without name. Employee said it was olive oil. Corrected on site: employee wrote olive oil on bottle.
– In self serve cooler, six trays of packaged on site meatloaf and whipped potatoes that did not have ingredient label. Corrected on site: employee labeled.
– In receiving area, a garage door has 1″ gap along both the right and left sides at the bottom.
– In bakery storage area, nine cases of black forest gummy bears stored on floor.
– Under self serve coke machines, two carbonators that do not have a double check valve with intermediate vent.
– In rotisserie chicken cooking area, connection on a hose is leaking.
– Self serve cooler in middle of produce aisle is leaking water.
– In deli, make table has handle broken off.
Sunrise Presbyterian Church, 825 E. Beloit (June 18)
– No violations.
