Saline Co. Food Establishment & Lodging Inspections, December 3-9, 2015

inspectionsFood Establishment and Lodging Inspections conducted in Saline County by the Kansas Department of Agriculture’s Division of Food Safety and Lodging from December 3 through December 9, 2015.

Food safety and lodging inspections are unannounced, and inspection results represent only those conditions found in the establishment at the time of the inspection.

24/7 Store, 671 Westport Blvd. (December 7) Regular Inspection
– Case of snack cakes setting on floor of walk-in cooler.
– Chemicals stored on top of drainboard of 3 vat sink. Corrected on site: moved chemicals to floor.

Braum’s Ice Cream #207, 656 S. Ohio St. (December 7) Regular Inspection
– Individual butter temperature at 75.5 degrees F. Container on counter next to gravy hot pot since approximately 6:15 a.m. Temperature taken at 9:45 a.m. Corrected on site: moved to ice bath to chill.
– Pastry type brush with melted bristles and cracked lid on sliced tomatoes. Corrected on site: discontinued use of equipment with imperfections.
– Bulk milk dipensing tube extending approximately 2 inches from cooling unit.
– Interior divider of ice machine has accumulation of mold.
– Lights in hood above grill covered in grease.
– Personal cell phone setting on top of canister of seasoning in back line area.
– Pink granules stored inside green bucket labeled as pickles. Corrected on site: labeled “Ice Melt”.

Grandma Max’s, 1944 N. 9th St. (December 9) Regular Inspection
– No detectable sanitizer in wiping cloth storage bucket in bakery area. Wiping cloth stored in soap in back prep area.
– Green beans in far west hole of west steam table only 120.5 degrees F. Per person in charge, put in steam table during night shift. Corrected on site: voluntary destruction.
– Cracked plastic food container on clean dish rack. Corrected on site: moved to warewashing to be disposed.
– Hinges on lids of ice cream freezer repaired with duct tape.
– Approximately 20 plastic food containers and 10 stainless steel food pans stored as clean on dish racks have old date mark stickers on exterior and are nested together. Corrected on site: moved to warewashing to be cleaned.
– Fire suppression inside of hood above fryer covered in grease and debris.
– Interior side of door to ice machine has an accumulation of mold.
– Plastic food containers stored nested together with water between containers on salad/bakery area.
– Utensils in salad bar area, bakery and food prep areas stored with handles and food contact surfaces jumbled in several directions.
– Hose attached to east faucet of 2 compartment sink hanging below flood rim of sink. Corrected on site: moved so hose hung over side of sink.
– Backflow device connected on main water line at mop sink missing top cap and has not been inspected since May 2014.
– Trash receptacle in employee’s unisex toilet room not covered.
– Base board missing in salad/bakery area.
– Light above fryer, above make tables on line, and bakery area not shielded or protected.
– Employee’s toilet room door not self closing.
– 3 reach-in coolers in wait staff area no longer in working order.
– Ceiling throughout kitchen has accumulation of dust on ceiling tiles. Floor in warewashing area covered in debris.
– Handwashing sink between food prep and warewashing area has thick grease film inside of basin.
– Employee’s toilet room door wide open during inspection.
– One spray bottle of blue liquid and one spray bottle of clear liquid stored by west wait staff area handwashing sink not labeled with common name. Corrected on site: labeled as cleaners.

La Hacienda, 641 S. Broadway Blvd. (December 7) Regular Inspection
– Small red bowl stored inside of canister of salt. Corrected on site: replaced with scoop.
– Wet wiping cloths setting on food prep counter top, on top of oil jugs and bottom of ice bath table.
– Fried shells stored inside cardboard tortilla box and tote tyoe container with only bottom lined. Corrected on site: relining containers on bottom and sides.
– Ice stick made from empty salsa bottle inside salsa. Corrected on site: discontinued use of homemade ice stick.
– Area behind Coca Cola fountain dispensing area is missing and exposing mechanical parts.
– Back flow device on Coca Cola carbonator in ill repair.

Starlight Skating Rink, 2661 Market Place (December 4) Regular Inspection
– No Violations.

Taco John’s, 3049 Riffel Dr. (December 9) Regular Inspection
– Utensils stored as clean inside a bus tub jumbled with food contact surface in several directions.

The Scheme, 123 N. 7th St. (December 3) Regular Inspection
– Sliced roast beef not redated when taken out of freezer. Corrected on site: dated December 2 through December 7, minus one day for preparation.

Tucson’s Steakhouse, 2750 S. 9th St. (December 9) Regular Inspection
– Cases of food setting on floor of walk-in freezer.
– Stainless steel pans on clean dish rack nested together with water between pans.
– Light behind grill not shielded or protected.
– Sunglasses setting on spice storage shelf.
– Unused mixer stored on shelf below 2 compartment sink collecting dust.
– Ceiling in prep and line areas covered in dust.
